Recipe: Gluten Free Applesauce Pancakes with Caramel

I woke up the other morning with a crazy craving for pancakes…we were out of frozen blueberries and I wanted something other than your typical pancake with syrup. I decided to scrounge through our cupboard and I came across a few small cartons of applesauce and decided on applesauce pancakes – from scratch. I was a bit hesitant, but figured I'd go for it. If Dusty ate them and liked them…then I'd know I found something to add to our "favorite recipes" list. And guess what – he loved them! And so did I. So much so…that I think you will too! Aside from the fact that they are delicious, they are super fitting for the fall season. Enjoy!

Pancake Ingredients: (makes about 5 pancakes)

  • 2 cups Krusteaz Gluten Free Pancake Mix
  • 3 cups Applesauce 
  • 2 whole eggs
  • 1 cup Almond milk
  • 2 tbsp pure vanilla
  • 1 tbsp cinnamon

Mix above ingredients in a mixing bowl, add more or less almond milk depending on how thin you like your pancakes, the more milk you add, the more thin the pancakes will be. However, the applesauce will keep them moist and more thick – so don't put too much almond milk! Once the ingredients are mixed in a bowl, use a laddle to spoon onto a griddle or into a frying pan, let the pancakes brown before flipping. Serve to a plate immediately and add below toppings.

Pancake Toppings:

  • Dipping caramel
  • 2 sliced apples (of your favorite variety)
  • 2 tbsp butter
  • 1/4 cup powdered sugar

Butter the warm pancakes, place sliced apples on the top of the pancakes, warm caramel in microwave for 10-15 seconds – drizzle over pancakes. Sprinkle a little powdered sugar! Voilà – delicious! Serve with your favorite cup of coffee and enjoy.
