Recipe: Avocado, Veggie Salad with Italian Olive Oil Dressing

I've recently been having prego cravings that consist of avocado and lemon/lime juice…making this concoction a yummy treat! It is a great quick and healthy salad to whip together this summer. Recipe below!

Ingredients: 
1 whole chopped yellow bell pepper
1 whole chopped orange bell pepper
1 cup chopped red onion
1 cup halved cherry tomatoes
2 cups diced cucumber
1 cup pasteurized feta cheese (2 cups if you are a cheese lover like me 😉
3 small avocados diced (dice these last so they don't get too brown)

Oil Mixture:
1/2 cup olive oil
2 tbsp italian seasoning
1 tbsp lemon juice (or a half squeezed large lemon)
1 tbsp lime juice (or a half squeezed large lime)
1 tbsp apple cider vinegar
3 tbsp fresh chopped basil
1/2 tbsp garlic powder
salt & pepper to taste

Step 1: Chop and dice all of the veggie ingredients 
Step 2: In a small bowl mix spices and oils
Step 3: Mix together, add extra spices as needed
