For every five meals I burn or turn into a complete disaster I always find a way to pull off one great one. And tonight's dinner was delicious – I did set the fire alarm off but it was because of a piece of food dropped on the burner…not that I burnt the actual meal. Win Win! I made falafel wraps and my favorite tzatziki sauce! Dusty loves it, I love it…and it is usually devoured quickly. I had to share the recipe in hopes you'll love it too! So simple, quick and easy. Use it to dip veggies in or put on a greek themed sandwich or falafel wrap. Dusty wants me to tell you all that "it was awesome!" 🙂
Steps & Ingredients
- Mix 1.5 cups of plain greek yogurt into a large bowl
- 2 tbsp olive oil
- Squeezed fresh lemon (to taste) I do about 2 tablespoons per cup of yogurt
- 1/4 cup freshly chopped dill
- 1/4 cup freshly chopped mint (my secret ingredient – makes it SO fresh tasting)
- 3 tbsp freshly chopped/crushed garlic (I cheat and get the squeezable tube kind)
- Salt and pepper to taste
Tip – I dip a spoon in here and there to taste it and make sure it's got the right flavors coming through 😉
Enjoy! Let me know if you get a chance to try it out.
