I am a huge breakfast fan. It is one of those things I wake up in the morning looking forward to. Having a delicous and satisfying breakfast in the morning starts my day off on track. While this recipe is a little more "complex" if you will…when I am in a hurry I usually do some scrambled eggs, fruit, and toast. On the weekends I like to get a little more creative and take my time, adding items together that will give me a wide variety of nutrition to get through my day. Recipe below!
Ingredients
Alexia Sweet Potato Tots
1 or 2 poached eggs
1 avacado
shredded cheddar cheese
pico de gallo
Simply Balanced Whole Grain Quinoa – microwaveable packets
Salt and Pepper to taste
Steps
Step 1) Bake the sweet potato tots
Step 2) Microwave the quinoa packet
*mix together*
Step 3) Add shredded cheese
Step 4) Add avacado
Step 5) Add Pico de gallo
Step 6) Add poached egg
Step 7) Salt and pepper
