Recipe: Romaine Lettuce Ground Turkey Wrap

So it’s a pretty big deal around these parts when we unearth a new profound love…which comes in the form of one thing. FOOD! This new recipe is so tasty and healthy. Win win! Enjoy.

Ingredients

Olive Oil
Minced Garlic
Diced Green Chiles – 2 4oz cans
Ground Cumin
Cayenne
Ground Turkey – 1 -2 lbs
Salt
Pepper
Garlic Powder
Green Onions – 1 cup
Large Bunch of Cilantro finely chopped – 1.5 cups (or more for taste!)
Lime Juice
Head of Romaine Lettuce

*substitute ground turkey with tofu for vegetarians!
*add feta for extra flavor!

Ground Turkey Prep

Step 1) Saute garlic, green chiles, and olive oil for roughly one minute. Add cumin and cayenne pepper and continue to saute for another minute.

Step 2) Add ground turkey and let simmer on medium – high heat until turkey is cooked through – stir often. (I add a little bit of water, about 1/2 cup to help with simmering and so the turkey doesn’t get burnt).

Step 3) After the turkey looks cooked through, reduce heat and add 1/2 cup of sliced green onions, 1 cup of chopped fresh cilantro and 2 tbsp of lime juice.

Step 4) While ingredients finish cooking/blending flavors on low – medium heat (add more water if things look to be drying out). Now create the “salsa”.

Salsa  Prep

Dice up avocados, dice up cherry tomatoes, chop about 1/2 cup of cilantro, 2 tbsp lime juice, salt, pepper and garlic powder to taste, 2 tbsp olive oil. Mix together.

Assemble Dish

Lay out as many romaine lettuce leaves as you wish to eat, use the leaves from the inner portion of the head of romaine so that the leaves are more “cup” shaped and will hold the filling.  Fill with ground turkey mixture and salsa mixture. Drizzle a favorite dressing if you wish! (olive oil & vinegar, balsamic, etc…)
