Delicious Wheat Berry Salad

I have been eager to share this recipe for quite some time now…however time just never allowed me to whip it together and photograph it. But here it is! As delicious as ever and I want to share it with you today.

Ingredients

 

(makes large batch)

 

5-6 Cups Wheat Berries

2 Cups Kalamata Olives

bundle of Green Onions

2 Cups Pecan Pieces

2 Cups Cherry Tomatoes

1/2 Cup Balsamic Vinegar

1/4 Cup Extra Virgin Olive Oil

1/4 Cup Chopped Fresh Basil

Feta Cheese *optional*

Salt & Pepper *to taste*

Cooking Wheat Berries: I buy them in bulk from the local food co-op. You want to rinse them and then start boiling them in equal water, adding water as you go, it takes about 45 minutes to cook them so they are soft enough to chew…however they will always have a crunchy firmness.

How To Make: After you boil, strain and rinse with cool water. Add to a large serving bowl…and then dice up/chop all necessary ingredients… and then mix it all together! It is that simple! Delicious…and if you make the large batch you can have some to pack for lunches. You can also change it up and eat it on top of a bed of lettuce.
